Years old umeboshi is highly praised in Japan. It is said to have multiple health benefits. Tastewise, aged umeboshi is much milder than younger umeboshi. The salt has had time to marry together with the plums, so the salinity is softer on the palate. We have aged umeboshi from three different years - 2012, 2013, and 2017. Prices vary according to the length of aging.
