Ume Hishio – umeboshi spread
A smooth and savory condiment made of our Umeboshi plums. It is salty, tangy, and slightly sweet at the same time. To make Ume Hishio, we de-salt the umeboshi, eliminate the pits, and cook slowly to a soft, spread-like consistency with sugar and sake. Try a drop of it on steamed rice or other grains. Use it as a finishing sauce for chicken and fish. Thin it a bit with water and you’ll have a delightful dipping sauce for vegetable sticks.
